{"id":1217,"date":"2022-08-02T22:45:39","date_gmt":"2022-08-02T21:45:39","guid":{"rendered":"https:\/\/www.notnick.com\/cookbook\/?p=1217"},"modified":"2022-08-02T22:46:21","modified_gmt":"2022-08-02T21:46:21","slug":"olivias-baked-lemon-raspberry-cheesecake","status":"publish","type":"post","link":"https:\/\/www.notnick.com\/cookbook\/olivias-baked-lemon-raspberry-cheesecake\/","title":{"rendered":"Olivia&#8217;s Baked Lemon &#038; Raspberry Cheesecake"},"content":{"rendered":"\n<p>Ingredients:<\/p>\n\n\n\n<p>Biscuit Base<br>300g digestives (crushed\/blitzed)<br>100g butter<\/p>\n\n\n\n<p>Cheesecakey bit<br>600g cream cheese (full fat &#8211; lets not mess around eh)<br>30g plain flour<br>200g sugar (white,Caster if you have it)<br>2 lemons (zested and juiced)<br>3 Eggs<br>175g creme fraiche<br>250g frozen raspberries <\/p>\n\n\n\n<p>raspberries, dried raspberries, coulis<\/p>\n\n\n\n<p>preheat oven to 220\u00bac (200\u00bac fan) &#8211; make the biscuit base to a 20cm round springform cake pan.<\/p>\n\n\n\n<p>Add the cheesecakey ingredients (except raspberries) to a mixer bowl and mix till smooth, then add the raspberries. Add to the cake tin on top of the biscuit base. <\/p>\n\n\n\n<p>Bake for 10 mins at 200\u00bac then reduce the temp to 110\u00bac\/90\u00bac and bake for a further 25-30 minutes. Then turn off the oven and leave the cheesecake to cool in the oven, with the door ajar for 2 hrs.<\/p>\n\n\n\n<p>Once cool, wrap in foil (still in its tin) and refridgerate overnight. Next day remove from the tin and deccorate.
