{"id":153,"date":"2009-03-06T00:36:24","date_gmt":"2009-03-05T23:36:24","guid":{"rendered":"http:\/\/www.notnick.com\/cookbook\/?p=153"},"modified":"2020-02-29T23:53:18","modified_gmt":"2020-02-29T22:53:18","slug":"lamb-quorma","status":"publish","type":"post","link":"https:\/\/www.notnick.com\/cookbook\/lamb-quorma\/","title":{"rendered":"Lamb Quorma"},"content":{"rendered":"<p>750g Lamb, trimmed and cubed<br \/>\n125g sliced onions<br \/>\n3 cloves garlic<br \/>\n2tsp ginger root, bruised and finely chopped<br \/>\n3 black cardamon pods<br \/>\n5 cloves<br \/>\n4cm stick of cinnamon<br \/>\n1\/2tsp turmeric<br \/>\n2tsp ground cummin<br \/>\n2tsp ground coriander<br \/>\n2tsp red chilli powder<br \/>\n1 tsp garam masala<br \/>\n300ml water<br \/>\n150ml plain yoghurt<br \/>\n1 1\/2 tsp salt<br \/>\n185g cream of coconut<br \/>\n125g canned chopped tomatoes<br \/>\n2tbls coriander leaves, chopped<\/p>\n<p>Fry the onion, garlic and ginger, until the onion is soft, add the spices (except Garam masala).<\/p>\n<p>Cook gently for about 20 minutes.&nbsp;<\/p>\n<p>Add the meat, increase the heat a little to cook off until the meat has a little colour.&nbsp;<\/p>\n<p>Add the water, and simmer for at least 40 minutes, longer for tough meat.<\/p>\n<p>Add the coconut, tomatoes, salt and garam masala.&nbsp;<\/p>\n<p>Simmer until the sauce has reduced.
