{"id":50,"date":"2008-05-25T23:01:21","date_gmt":"2008-05-25T22:01:21","guid":{"rendered":"http:\/\/www.notnick.com\/cookbook\/?p=50"},"modified":"2008-05-25T23:01:21","modified_gmt":"2008-05-25T22:01:21","slug":"chocolate-fondants","status":"publish","type":"post","link":"https:\/\/www.notnick.com\/cookbook\/chocolate-fondants\/","title":{"rendered":"Chocolate Fondants"},"content":{"rendered":"<p><span style=\"font-size: 14pt; color: rgb(0,0,0);\">Chocolate Fondants<br \/>\n<\/span><span style=\"color: rgb(0,0,0);\">03 March 2007<br \/>\n<\/span><br \/>\n<strong>Serves 4<\/strong><br \/>\n<strong>Preparation time\u00a01-2 hours<br \/>\nCooking time\u00a030 mins to 1 hour<br \/>\n<\/strong>\u00a0<br \/>\n<span style=\"color: rgb(0,0,0);\"><\/span><strong>For the fondant<br \/>\n<\/strong>175g\/6oz dark chocolate (at least 70 per cent cocoa solids)<br \/>\n110g\/4oz softened butter<br \/>\n40g\/1\u00bdoz ground almonds<br \/>\n2 large free-range eggs, separated<br \/>\n40g\/1\u00bdoz cornflour<br \/>\n90g\/3\u00bdoz caster sugar<br \/>\n4 good quality dark chocolate truffles<br \/>\ncocoa powder, for dusting<br \/>\n\u00a0<br \/>\n<span style=\"color: rgb(0,0,0);\"><\/span>For the fondant, preheat the oven to 180C\/355F\/Gas 4.<br \/>\n8. Grate 40g\/1\u00bdoz of the dark chocolate into a bowl and set aside.<br \/>\n9. Melt half of the butter and brush liberally around the inside of four ramekins. Dust the ramekins well with the grated chocolate, shaking out any excess, then place onto a baking sheet and set aside.<br \/>\n10. Place the remaining chocolate, including any shaken out excess, and the remaining butter into a heatproof bowl and place over a pan of barely simmering water to melt.<br \/>\n11. Add the ground almonds, egg yolks and cornflour to the melted chocolate and stir well.<br \/>\n12. In a separate bowl, whisk the egg whites until stiff peaks form when the whisk is removed.<br \/>\n13. Gradually add the caster sugar, whisking constantly.<br \/>\n14. Gently fold the egg white mixture into the melted chocolate mixture, taking care to retain volume in the whites.<br \/>\n15. Spoon half the chocolate and egg mixture into the base of each prepared ramekin. Place a chocolate truffle on top, then fill each ramekin with the remaining mixture.<br \/>\n16.
